How the espresso ratio works

Espresso brew ratio is dose to beverage yield, not coffee to tank water. A 1:2 normale means 18 g in the portafilter and 36 g in the cup. Ristretto is shorter (about 1:1.5); lungo is longer (about 1:3). Weigh the shot as it pours — that is the number that matters.

What is the ratio for ristretto and lungo?+

Do espresso ratios measure water in or espresso out?+

Espresso out. Unlike filter brewing, espresso ratios compare the dry dose to the beverage weight in the cup, because the puck retains a large share of the water pushed through it.

How long should an espresso shot take?+

Aim for 25–30 seconds from the first drip to reach a 1:2 yield. If it runs faster, grind finer; if it chokes and runs slower, grind coarser. Keep the dose constant while adjusting.
